Pinot Noir
This growing zone is located immediately upon leaving the village of Aloxe-Corton heading north. The parcel covers a land area of 0.70 ha and enjoys eastern-south-eastern exposure. The vines are some 60 years old and the soil here contains a darker brown clayey limestone with a pebbly texture.
The grapes are handpicked and stripped in their entirety. We then proceed with a cold maceration phase, prior to fermentation that takes place in open tanks lasting approximately 12 to 15 days, during which time one cap immersion and one pumping-over are practiced each day. This protocol serves to transmit colour into the juice while not inciting the production of undesirable tannins. Once the alcoholic fermentation has been completed, the wines are poured into barrels made in France (50% of the barrels are new, with a four-year use life). The maturation period spans 18 months, and racking is performed twice over this period. Bottling occurs after 2 months of assembly and a slight filtration step.
A deep ruby colour with purplish shades.
The very expressive nose of this wine tends towards fresh fruit. The Corton Perrières label is sturdy and powerful to the taste, yet also offers an elegant and refined balance.
It has been well crafted around the tannin content and showcases flavours resembling pitted fruit
An excellent accompaniment with more robust game dishes, like venison and wild boar as well as with a good number of cheeses, including the well-aged variety.
