ORIGIN

Domaine Georges Lignier owns 1 Ha 80 of this appellation, and produce about 80 hectolitres per year (about 10 000 bottles). The parcels are located at the bottom of the hillslopes, on calcareous soils, with crystalline stones.

VINIFICATION

Harvest is 100% destemmed and the vinification is driven in 3 phases: maceration which lasts 2 to 4 days. Then start the alcoholic fermentation with the transformation of the must into wine for 3 to 4 days. After that we need 4 to 5 days to get a nice extraction of tannins, anthocyan … After the pressing process, the new wine is directly stocked on French wood barrels of 228 litres of which 30% is new oak. The maturing in barrels lasts 18 months during which we will do 2 rackings to get ride of the lees. The wine is bottled by Georges Lignier in the estate.

TASTING NOTES

Dark and intense red colour. The nose is very complex and shows fresh fruits aromas when young. Then it moves to animals and leather notes when ageing. Concentrated and complex in the mouth, the wine shows also nice red fruits tastes. It is round and supple with a nice persistency. Will be at his best after 4 to 5 years, but can also been kept up to 10 years.

FOOD MATCHING

Matches well with white meats, as well as grilled red meats, as well as fresh cheeses. Served at 18°C.
