Domaine d’Elise is a young property in Burgundian terms, dating back to 1970. It was taken over by current owner Frédéric Prain in 1982. The vineyard faces south, on the uppermost slopes of the Côte de Lechet, just above the Premier Cru Côte de Lechet, and overlooking the village of Chablis.
While the 13-hectare vineyard is composed of one section, it is divided into Chablis and Petit-Chablis. The soil is a mix of chalk and clay, and very stony, which limits production levels. When feasible, harvest is purposely delayed, to achieve the maximum grape maturity. Vinification remains traditional – fermentation at 20ºC, with a controlled malolactic fermentation, and the wine is left on very fine lees for several months before filtering and bottling.
Prain’s aim with the domaine is to maintain the highest quality without the highest price. To achieve this he sells half the production in bulk, and keeps the best quality fruit to bottle under the Domaine d’Elise name.
